REALLY sticky rice

Posted by gizmo at 08:08 PM in food . | 9 Comments

According to this article sticky rice could have been used as mortar for the great wall of china.

Ive been trying to make sticky rice for the last few weeks and totally failing. Anyone out there have some advice?

I think I had some pretty sticky rice over at polamex's once. I could be imagining things though.

Don't you have use a different kind of rice expecially for sticky rice?

ive seen a few different methods. there seems to be some kind of rice that is sticky - you soak it for a while before you cook it. The other method ive seen is to add a rice vinegar solution to hot rice. Ive tried the latter to no avail with short grain brown rice. I know there is a way to make brown rice sticky.. i just dont know how :(

I've never made stickey rice, but a friend who has told me that you really need a rice cooker and "sushi" rice. Did you fan the rice while pouring in the vinegar? The fanning is important and is easier if one person is pouring while another is fanning.

According to my minimal knowledge of rice, there are certain kinds that naturally contain more "sticky stuff" (gluten?) and will cook stickyly. Usually you can find big bags of this stuff at Asian supermarkets, which seem to exist all across the US.

Get glutenous rice. I think sushi rice is glutenous rice.

After many failed attempts at making sushi, I would leave it to the pros. (I read somewhere that sushi chefs spend a year just learning how to make the rice.)

If you need to satisfy your craving at home, sashimi is very easy to make.

1) Cut the topping into slices.
2) Serve with soy sauce, wasabi and some shredded daikon radish.

So did you have you tried making sticky rice again? Did the fanning help?
